The Master Kuo G5 2XL Taiwan Tuna Knife is a substantial fish knife designed for efficiently handling large fish. Its purpose extends to tasks such as decapitating large fish and sectioning the body into steaks, facilitated by the blade’s curved shape that allows for smooth, long lateral cuts.
Crafted with precision, this knife features a 3-layered laminated steel construction. The outer layer is made of stainless steel, providing durability and resistance to rust, while the inner core boasts traditional Japanese High Carbon SK5 steel with a remarkable RC hardness of 60-61.
In terms of dimensions, the blade measures 260 x 165 x 5.3 mm (10.25 x 6/5 x 0.20″), and the handle is 100 mm (4″) long, resulting in an overall length of 315 mm (12.4″). The knife weighs 1,100 g (38.8 oz. or 1.1 kg / 2.4 lbs).
Proper care for this knife involves cleaning it with warm water and soap, followed by immediate towel drying. It is advised not to use a dishwasher for cleaning. While the stainless clad outer steel prevents rusting, the exposed SK5 core edge steel may exhibit signs of surface rust over time. Fortunately, most surface rust can be effectively removed by sharpening the edge.
