Master Kuo’s G-4 Medium Fish/Butcher’s knife is designed for cutting medium sized fish with bones, and is often used in the traditional markets as a butchering knife for separating the fat layers from meats. The blade can also be used to scrape the scales off the fish.

This G4 is made with 3 layered laminated steel. The outer steel is stainless while the inner core steel is a traditional Japanese High Carbon SK5 steel, and has a RC hardness of 60-61.

Knife care: Keep clean with warm water and soap. Towel dry immediately. Do not put into dishwasher. Stainless clad outer steel will not rust, but exposed SK5 core edge steel can show signs of surface rust over time. Most surface rust can be removed by sharpening the edge.

Kuo Chang-Shi is most famous for forging the original Green Sword of Destiny from the 2000 movie “Crouching Tiger, Hidden Dragon”. His Damascus steel designs incorporate human bones and ashes to imbibe the spirit into the piece, as well as to add some elemental strength to the steel (such as manganese and phosphorus), which is based on historical accounts in ancient Chinese sword making.
